Banana Bread with Applesauce and Honey

Banana Bread with Applesauce and Honey

I love banana bread. However, I’ve always had a dilemma with it. The problem is it’s either delicious but made with all the bad stuff – white flour, white sugar, and oil. Or…it’s super healthy but the texture is off and/or it’s not sweet enough. So I went on a mission to come up with a banana bread recipe that’s both delicious and nutritious. I’ve come up with this banana bread with applesauce and honey recipe that satisfies both my health needs as well as my picky taste buds. Win Win!

This healthy banana bread with applesauce and honey recipe is packed with protein, fiber and omega-3 fatty acids (protein and omega-3 fatty acids from the flax and fiber from the bananas, flax, AND applesauce).

The crumble on top is optional. It does make it slightly more indulgent since it uses butter and brown sugar but I just couldn’t help my self. It’s still delicious without out it, but I just thought I’d try something different.

Ingredients:

  • 3 overly ripe bananas – mashed
  • 2 eggs – beaten
  • 1/2 c. unsweetened applesauce
  • 3/4 c. honey
  • 1 1/2 c. whole wheat flour
  • 1/2 c. ground flax meal
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9X5″ loaf pan.
  3. In a large bowl, mix together the flour, ground flax meal, baking soda, salt, and cinnamon.
  4. In another bowl, mix together the applesauce and honey; add the beaten eggs and mashed bananas and mix until well combined.
  5. Add the banana mixture to the flour mixture and mix until well combined.
  6. Pour into the loaf pan.

For the Crumble:

  • 1/4 c. oats
  • 1/4 c. brown sugar
  • 1/4 c. butter – room temperature
  • 1/8 c. chopped walnuts
  • 1/4 tsp. cinnamon
  1. Combine all the ingredients until well combined.
  2. Evenly top the banana bread batter with the crumble.
  3. Bake at 350 degrees for 60 to 65 minutes until a toothpick inserted into center of the loaf comes out clean.

Southwest Sweet Potato and Quinoa Power Bowl 

My hubby might be one of the pickiest food connoisseurs I’ve ever met. So when he said this was one of the best meals he’s ever had, I knew I hit a home run. I usually veer away from all of these “power bowls” that I hear about just because they seem to all taste the same and are typically too bland for my liking. This southwest sweet potato and quinoa power bowl, however, is anything but bland. I’ve always loved the combo of sweet potatoes and black beans but then when you add everything else plus this AMAZING zesty dressing, it truly is an orgasm in your mouth.

What’s even better is it’s SUPER healthy! You won’t have to eat much of this yummy dish to feel full and satisfied since it is SO nutrient rich. I highly recommend topping it with a generous dollop of sour cream, which adds a cool and creamy balance to all of the rich flavors. But if you’re vegan just leave it off – easy as that!

Ingredients:

  • 3-4 small to medium sized sweet potatoes – peeled and cubed into 1″ pieces
  • 2 tbsp. olive oil
  • 1 c. uncooked quinoa (makes approximately 3 cups when cooked)
  • 1 small white, yellow, or red onion – diced
  • (1) 15 oz. can whole kernel corn – drained
  • (1) 15 oz. can black beans – drained and rinsed
  • 3/4 c. cilantro – roughly chopped
  • 6 tbs. sour cream (to be used when plating)

Ingredients for the Dressing:

  • 4 tbsp. olive oil
  • 3 tbsp. lime juice
  • 2 tbsp. honey
  • 1 tsp. garlic – minced
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground paprika
  • 1/4 tsp. chili powder
  • 1/2 tsp. Tajin seasoning
  • 1/4 tsp. salt

Directions:

  1. Preheat oven to 420 degrees.
  2. Place the peeled and cubed sweet potatoes on a large sheet pan; drizzle with olive oil; sprinkle with salt and toss until evenly coated; Evenly distribute on pan.
  3. Bake the sweet potatoes for approximately 20-25 minutes (flipping them once during the cooking process).

Roasted Sweet Potatoes

  1. Season the sweet potatoes again with salt and/or your favorite seasoning when finished roasting.
  2. Cook the quinoa according to the instructions and set aside.
  3. Saute the diced onion until translucent; season with salt and pepper.
  4. In a large bowl combine the sweet potatoes, quinoa, black beans, corn, sauteed onions, and cilantro until well combined and set aside.
  5. Directions for the Dressing: In a small mixing bowl, combine all of the ingredients thoroughly.
  6. Drizzle the dressing over the quinoa and vegetable mixture; toss until well combined.
  7. Serve with a dollop of sour cream and garnish with extra cilantro.

Embrace your anger or frustration or sadness, and know that it’s normal and that’s just life. This will help you be at peace with your true self. The reason why I find this daily practice so beneficial to being a happier mom is that it automatically makes you stop and think about each moment since that could potentially be an “option” for your daily recording. It is such a simple technique toward mindfulness.

People who have a steady daily routine tend to be happier than those who choose adventure or impulsiveness. When you create routine in your life (by regulating your daily actions) you deactivate your “fight or flight” instincts because you’re no longer confronting the unknown. This is why people who have habitual routines experience so much joy: their fear instincts are turned off long enough for them to actually enjoy something. Ultimately having routine gives you security in the known, which decreases stress and anxiety.

Even small levels of sleep deprivation over time can chip away at your happiness. You might see that you’re less enthusiastic, more irritable, or have some of the symptoms of feeling persistently sad or empty. All these alterations to your mood can affect not only your individual mental health, but your relationships and family dynamics as well.

I don’t want to get too mushy but it is as simple as a hug or kiss from the hubby just feels good. Physical touch from someone you love really goes a long way in the happiness department. I really notice it too when I’m lacking any physical affection in my life. It makes me more irritable.

Even just a simple hug releases a neurotransmitter and hormone oxytocin. Oxytocin tells your amygdala (the fear, anxiety, and aggression headquarters of your brain) to calm down.

Just think about it, when you’re stressed, how much better do you feel when you hold your partner’s hand? You would probably be surprised at how much it will reduce your stress. Increasing the physical touch between you and your partner will have positive effects on your overall relationship as well. So try to be more “lovey-dovey” with the loved ones in your life and see if it increases your happiness level.
