Grilled Salmon Sandwich with Caramelized Onions and Cream Cheese: Melts in Your Mouth!


Grilled Salmon Sandwich

My husband saw this grilled salmon sandwich while watching Andrew Zimmern’s Delicious Destinations and recommended we make it. It must have looked pretty dang good if he wanted to make it because this is not something he does often. This salmon sandwich sounded like heaven! We made it a couple days later and it definitely lived up to its expectations. It is so simple yet unique and just melts in your mouth.

What makes this grilled salmon sandwich so perfect is the balance of the simple yet rich flavors and textures. The salmon is moist and fatty with the perfect amount of seasoning. The french baguette is warm yet crunchy and moist. The caramelized onions are sweet and savory. And the cream cheese is smooth and creamy. My mouth is watering just thinking about it!

tips for perfect execution

The key to making this grilled salmon sandwich is that each step, though simple, needs to be executed perfectly:

The salmon: needs to be fresh and cooked to perfection. Salmon is easy to over cook, which will ruin the entire sandwich. I recommend cooking it with the skin side down for 10-12 minutes without flipping to ensure that its flaky and moist.

The caramelized onions: need to be delicately cooked on a very low heat for approximately 45 minutes and stirred every few minutes to ensure you get that subtle caramelized crust without burning them.

The french baguette: needs the bread to be scooped out of the center to make a “boat” for the ingredients and lightly grilled on each side.

The cream cheese: needs to sit out for 15 minutes so it spreads easily.

Grilled Salmon Sandwich


  • 2 fresh salmon filets
  • salmon seasoning blend (we used Chef Paul Prudhomme’s Magic Salmon Seasoning)
  • 1 large red onion
  • 4 tbs. of olive oil or butter
  • 1/2 tsp. of sugar
  • 8 oz. package of cream cheese (we used Philadelphia)
  • 1 french baguette


For the Caramelized Onions:

  1. Cut the stem and root ends off the onion. Then halve the onion and cut it into thin slices.
  2. Melt the butter or olive oil in a skillet. Add three to four tablespoons to a large skillet over low/medium heat.
  3. Add the onions and slowly cook them for 5-10 minutes
  4. Add a pinch of salt and 1/2 a tsp. of sugar
  5. Let the onions cook slowly. Don’t rush them. Turn or stir the onions so that they evenly become soft and brown.
  6. Continue stirring the onions and enjoy watching them turn to a deep dark purple.

For the Salmon:

  1. Build a medium-high fire on a clean gas or charcoal grill.
  2. Season the salmon with seasoning blend, lightly oil the grate of the grill, then place the fillets skin-side down over the fire and cook for 10 minutes or until fish flakes easily with a fork. There is no need to flip the salmon over.

Assembling the Grilled Salmon Sandwich:

  1. Slice the french baguette into the sandwich size you like.
  2. Lightly grill each side of the baguette in a lightly oiled medium sized pan.
  3. Scrape out the thick center of both halves of the baguette to create a boat for the ingredients.
  4. Generously spread each half of the baguette with cream cheese.
  5. Generously apply the caramelized onions to the bottom half of the baguette.
  6. Add the flaky salmon to the top of the caramelized onions.
  7. Top the salmon with more caramelized onions.
  8. Top with the other half of the french baguette and ENJOY!!!

I hope you love this sandwich as much as we did! This is a great sandwich to make for a party if you really want to impress your guests.

Simple Ways to Set up a Montessori Room

Years ago, I was lucky enough to work at a Montessori pre-school before I went off to college. It introduced me to a philosophy that I become fascinated with and has become a valuable tool for me now that I have child of my own. I try to incorporate it into my 15 month old’s development as much as I can.

One of the most important aspects of Montessori preparing the right environment for them. So when Jack began crawling, I decided to set a Montessori room for him.

So what exactly is Montessori?

As Maria Montessori said, “We must give the child an environment that he can utilize by himself: a little washstand of his own, a bureau with drawers he can open, objects of common use that he can operate, a small bed in which he can sleep at night under an attractive blanket he can fold and spread by himself. We must give him an environment in which he can live and play; then we will see him work all day with his hands and wait impatiently to undress himself and lay himself down on his own bed.”

This type of environment suits many pre-schoolers, toddlers, and even older infants since they enjoy independence, freedom and control within their space.

I’ve come up with some simple ways you can set up a Montessori room in your home that your little one will love.

Montessori Room


It’s important to de-clutter the space. Less is more in a Montessori room. Eliminate excess furniture and toys so your child doesn’t get overstimulated or overwhelmed.

Children have sensitive periods, which are stages in a child’s development when they are more responsive to certain stimuli and quicker to learn particular skills. That being said, keeping it simple allows them to focus and learn when working with each toy without getting too distracted. I like to just have a few toys out and switch them out every other week so they don’t get bored.

Keep everything Low

Use shelving that is low so your child can easily access anything they want to work on without needing your help to get it down. Keeping everything at eye level or down low is essential to providing them with a Montessori room that they have independence and control in.

For older children ages 2+ you may want to include a table and chair so they have their own special place where they can play with their toys.

I also like to include a low mirror. This is a great way for them to discover their own body/features. It encourages asking them questions like “where’s jack’s belly? There it is!”

Choose the right toys

Choose toys made of natural materials like wood that inspire natural learning and engagement opposed to plastic toys that make noises and simply provide “entertainment.”  I like to include toys that work their fine motor (small muscles) skills that develop the synchronization of hands and fingers with the eyes as well as gross motor (large muscles) skills that develop muscle strength, endurance, balance, coordination and postural control. An area for books and reading is also a must.

A place for everything

Avoid bins full of toys. Each toy deserves a home. This technique is calming for the child since it is predictable, which gives them a better sense of control within their environment.

Include Nature


Make it cozy

Include an area with a big floor pillow and other pillows or stuffed animals that gives them an ears to rest or read books together. Or a comfy chair by a window for an older child.

Include art on the walls

Many children’s rooms have beautiful art or pictures but they don’t get to enjoy them because they are too high up to see. Include art at their eye level so they can enjoy the beauty.

After I made my son’s montessori playroom I realized I could easily convert other spaces in our home the same way. Here is a very simple way to transform your living room to montessori space. I have a simple shelf that I bought for about $80 from Ikea. I put a few toys out at a time so he can focus without too many distractions. I switch out the work every few weeks or until I notice he is getting bored with something. This is also a wonderful way to make sure your house doesn’t look like a toy tornado hit it at all times either.

Whatever lifestyle or method you prefer doesn’t make it inferior or superior to other, as long as each meal is balanced with one healthy carb, protein, and fat.

Whichever way you choose to prepare your toddler’s meals, it’s important that they get a healthy balance of carbohydrates, protein, and fat each day. An easy way to do this is to include at least one carb, one protein, and one fat in each meal.   • Chicken breast: sliced fresh from deli or shredded from rotisserie

  • Frozen foods: chicken nuggets, fish sticks, whole wheat pancakes/waffles, or other healthy kid-friendly frozen foods
