The Best Arugula and Pear Salad You’ll Ever Eat


This arugula and pear salad is hands down my favorite salad! It’s perfect for barbecues, block parties, picnics or really any occasion. It is truly the best arugula and pear salad you’ll ever eat.

The the flavors and textures in this salad are perfectly balanced. The pepperiness of the arugula, sweetness of the pears and dressing, saltiness of the pistachios, tartness of the blueberries, and creaminess of the goat cheese make this salad forget your eating a salad. Anytime I take this to a party everyone is truly obsessed with how delicious and creative it is. It’s also super easy, healthy and fun to make!

Key to a good summer salad

  1. Fresh greens and ingredients
  2. Balance of textures (crunch and creaminess)
  3. A sweet ingredient (usually fruit paired with a slightly sweet dressing)
  4. Think beyond leafy greens: There are so many possibilities for summer salads besides lettuce. Try a combination of fresh and dried fruits, nuts, cooked grains, cheeses, veggies, etc.
  5. Fresh herbs: Throw in some fresh herbs such as basil or cilantro to add a boost of flavor

  1. 1 package of arugula
  2. 1 small package of blueberries
  3. 1 pear – peeled and thinly sliced
  4. 1/2 c. shelled pistachios
  5. 4 oz. goat cheese (I use the kind with honey)
  6. Marzetti strawberry poppyseeed dressing

  1. Layer half of the arugula in a large salad bowl and top with half of all the other ingredients
  2. Layer the other half of the arugula with the remaining half of the ingredients
  3. drizzle with dressing (wait to add dressing until right before you serve the salad to ensure it doesn’t get soggy)
  4. Toss thoroughly
  5. ENJOY!!

the best vegetarian cauliflower pizzaI know, it’s really hard to find a super tasty cauliflower pizza crust. I’ve tried several different store bought frozen cauliflower pizza crusts and they’ve all been lacking flavor, had bad texture, have been difficult to bake correctly, or all of the above. I’m not going to name names but I know I’m not the only one who’s had this struggle! However, I have found a GREAT frozen cauliflower pizza crust and that is…drum roll please….Caulipower pizza crusts. They have them in the gluten free frozen food section of my local grocery store. Personally, I think they are equal to if not better than traditional pizza crust. If you are on a Keto friendly diet, this is a great way to get your carb fix without actually consuming too many carbs.


  1. Higher in fiber
  2. Lower in calories
  3. Lower in carbs
  4. One regular slice of cheese pizza can have up to 500 calories with 35 grams of carbs. One slice of cauliflower crust pizza is around 120 calories and only 8g carbs

This particular recipe has a few secret techniques that make it EXTRA tasty and will have you hooked! The main thing is I saute the mushrooms, onions and garlic before adding to the pizza to bring out the flavors. I also drizzle the sauce on top instead of the bottom which gives each bite more dynamic.

  1. 1 Caulipower frozen pizza crust (no need to thaw like a lot of the other brands)
  2. Your favorite jar of pizza sauce (I use one from a local Italian restaurant here in St. Louis called Zias)
  3. Your favorite pizza cheese (I use a mixture of mozzarella and a local cheese called Provel)
  4. 2 tbs. olive oil
  5. 1 c. of your favorite mushrooms (I use oyster)
  6. 1 large clove of garlic (minced)
  7. 1/2 of a small yellow onion (thinly sliced)


  1. Preheat oven to 425 degrees
  2. Saute the onions and mushrooms for a couple of minutes
  3. Add the garlic and saute for another couple of minutes
  4. Brush the crust with a think layer of olive oil
  5. Add the mushroom, onion and garlic mixture evenly to crust
  6. Add the cheeses
  7. Drizzle the sauce on top in a spiral formation starting in the middle and working your way to the edge
  8. Place directly onto the rack for a crispier crust and back for about 15 minutes or to your liking
  9. Enjoy!!

Simple Roasted Sweet Potatoes

These simple roasted sweet potatoes are easily one of my favorite things to eat and lucky for me, they’re also super healthy. My husband and I make these probably 2-3 times a week as a side dish to our dinners. They go with just about anything – burgers, fish, chicken, tacos, anything really. And another bonus is they’re relatively in expensive.

I always make a little extra to use the next day for my one year old since he loves them as well. I have a few little tricks with this recipe that make these sweet taters extra delicious:

  1. I cut them into smaller pieces than normal to make them more crispy
  2. I add a secret ingredient: Big Green Egg Sweet and Smoky Seasoning
  3. I toss them two times during the roasting process to make sure they cook evenly

Why are sweet potatoes so good for you?

  1. They are packed with vitamin A which supports your immune system, eyes, and cells
  2. They also have high amounts of fiber and potassium
  3. They may also help maintain a healthy blood pressure and protect against cancer


  1. 2 medium sweet potatoes
  2. olive oil
  3. sea salt
  4. The Big Green Egg Sweet and Smoky Seasoning


  1. Pre-heat oven to 400 degrees
  2. peel sweet potatoes
  3. dice into 1/2″ cubes
  4. lightly toss with olive oil and sea salt
  5. Bake for 30 mins – taking out two times to toss – sprinkling the seasoning both times
  6. Serve and enjoy!
